Corbeau is a French dinner spot on North 26th Street in Proctor that calls itself a Franco-Tacoman eatery. It opened in August 2024 in the former Pomodoro space. The kitchen puts French technique to work on vegetables, meat, fish and mushrooms from local farms, ranches and seafood suppliers, so the menu changes with the seasons. A recent menu had local oysters with mignonette, chanterelle toast, big Spanish sardines and steak frites made with dry-aged Washington ribeye and beef-fat fries.
The wine list leans toward bio-regenerative bottles, there’s a wine club and the occasional winemaker dinner, and a short weekday happy hour goes by La Joie.
